What A Wednesday Find!

Well I found exactly what I was looking for, for my, "What a Wednesday"! Since time seems to be going so slow today, this adorable turtle clock is perfect for today's find. You can find him and other beautiful clocks to fit any decor at RFForeverClocks on etsy.

What a Wednesday!

Once again it is What a Wednesday!  It's been a busy and slow day. Where to start.....Since Wednesday's are my day off, I have cleaned house, worked on 2 baskets, been to the post office to mail out packages, printed up brochures and note cards and listed a Think Pink Gift Basket for breast cancer awareness on etsy, and even with all that, the day seems to be dragging. It could be the weather. It has been cloudy all day. Or it could be the fact that I've been up since 5 a.m. Not sure what the reason is, but need to do something constructive, so I won't get lazy! So I'm off to etsy to find a, "What a Wednesday" find! I'll be back.

Recipe of the week!

Here's the new recipe of the week.

 It's a nutritious and healthier twist to nachos!

 Enjoy!

POTATO NACHOS


1 ½ pounds russet potatoes

1 ½ tablespoons vegetable oil

½ teaspoon garlic salt

1 teaspoon Mexican seasoning blend

1 cup Mexican blend shredded cheese

¼ cup rinsed and drained canned black beans

¼ cup diced tomatoes

¼ cup sliced black olives

¼ cup sliced green onions

3 tablespoons canned diced green chiles

Salsa, guacamole and sour cream (optional)

1. Preheat oven to 425 degrees. Scrub potatoes and cut into 1/2-inch thick wedges.

2. Place potatoes into a medium size bowl with the oil, garlic salt and Mexican seasoning. Stir well to coat potatoes with oil and seasonings.

3. Transfer to a large baking sheet and spread into a single layer. Bake for 25 to 30 minutes, stirring several times, until crisp and golden brown.

4. Top with cheese, beans, tomatoes, olives, onions and chiles.

5. Bake for 5 minutes more to melt cheese.

6. Serve with salsa, guacamole and sour cream.

What a Wednesday!

Today is my baby's 21st birthday! Yep, he's 21 today. So this morning I have been out shopping, looking for books on how to speak Japanese! Of all the languages out there to learn, he wants to learn Japanese! His ultimate goal is to live in Japan! So I picked up a Japanese/English dictionary, a workbook to learn how to write Japanese, and a textbook with CD! I'll let you know in a few weeks how he's doing!

Recipe of the week!

Eek! I'm a little slow with my recipe of the week, but it is worth the wait. I'm a junkfood, carb- aholic and this is one of my favorite by scratch recipes, I'm sure you'll enjoy.

Applesauce Cake

1/2 c. shortening                                          1- 1/2 tsp. baking soda
1 c. sugar                                                     1- 1/2 tsp. salt
1 c. brown sugar                                           3/4 tsp. cinnamon
1 large egg                                                   1/2 tsp. cloves
1- 1/2 c. unsweetened applesauce                 1/2 cup of water
2- 1/4 c. flour                                                       
                        1 c. chopped walnuts (optional)


cream shortening and sugar, add egg and applesauce. Add combined dry ingredients, then water and nuts.
Pour into a greased 9x13 pan. Bake at 350 degrees for about 45 min.

This is a very moist cake. You can frost it, or just sprinkle some powdered sugar on top, and it is great with ice cream!

What A Wednesday!

Today I want to talk about dogs! I have this puppy that is in the chewing stage and is turning my entire world upside down! Not only am I having to reschedule my shop hours, because he can't stay home alone! But even when I'm home, everything has to be placed 5 feet above the floor! Might as well start tacking things to the ceiling! He is sweet... When he's sleeping! Here are a few pictures for you to enjoy.

Sunday's Recipe- Zucchini Pie

Okay I said I'd post a new recipe today and here it is! Zucchini Pie! Don't let the name fool you, it was sweet and creamy, and a bit green! Actually, you'd get even your pickiest eaters, who don't like veges, to eat this! Enjoy! And let me know what you think!

Ingredients


1 1/2 cups zucchini - peeled, seeded and sliced  (See Note)

1 cup evaporated milk

1 cup white sugar

1 egg

3 tablespoons margarine

3 tablespoons all-purpose flour

1 teaspoon vanilla extract

1 pinch salt

1 recipe pastry for a 9 inch single crust pie

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

Directions

Boil zucchini until tender. Drain and let stand in cold water for about 5 minutes, then drain.

Put the zucchini, evaporated milk, sugar, egg, margarine, flour, vanilla and salt into a blender and blend until smooth.

Pour into unbaked pie shell. Sprinkle with cinnamon and nutmeg. Bake at 425 degrees F (220 degrees C) for 5 minutes. Reduce heat to 325 degrees F (165 degrees C) and bake until set.

(Note I didn't peel mine. Gave the pie a nice light green color with dark green flecks)
